Doris was born and raised on a farm north west of Cotesfield to John and Ida Coufal. She was the second of nine children. She enjoyed working in the fields with her father as she was growing up. She attended rural District 71 and then Scotia High School. She graduated in 1934, an honor student with a High School diploma and Teaching permit.
Doris married her onetime eighth grade classmate, Homer Simpson in 1935. They lived most of their lives together in the Cotesfield area. They were married sixty-one years. Doris and Homer had two children, JoAnn Ellen, now deceased, and Jerome Allen who resides with his wife Margaret in Hemet, California.
Doris taught school in Howard County for forty years, and in her retirement years she enjoyed visiting with her former students.
Homer Simpson suffered a debilitating stroke in early 1993 and Doris moved to St. Paul, Nebraska to be near him in the hospital where he resided until his death in 1996.
Doris kept busy volunteering at the Senior Center, the hospital auxiliary, and various other places where she thought was needed. She was a long time member of the Cotesfield Methodist Church and belonged to several Senior Clubs. Her pastime was doing many counted cross stitch creations, bowling, playing cards, and polka music.
Doris moved to Hemet, California to live out her years with her son and daughter-in-law in early 2011.
Doris leaves her son Jerome and his wife Margaret, a sister, Detta Wadas in Colorado, four grandchildren, seven great-grandchildren, and many nieces and nephews. Preceding her in death were her parents, her husband Homer, her daughter JoAnn, brother Leonard Coufal, sisters Leora Ingles, Isabel Weinrich, Evelyn Coufal, Patsy Coufal, and twin infant brothers Dale and Darrel.
