Gilbert “Archie” Thing Chee Ching, 91, of Honolulu, Hawaii passed away peacefully March 16, 2012 after a short stay at Oahu Care Facility. He was born on June 1, 1920 in Anahola, Kauai and graduated from St. Louis High School. One day he was visiting his friend’s house near Liliha and coincidently his neighbor’s cousin was also visiting and was talking story in the yard. It was his luckiest day as he met his future wife, Rose, who he married on July 27, 1941. Gilbert worked for Oahu Air Conditioning as an air conditioning mechanic while running a family business with his two brothers and raising his four children with his wife. During his free time, he enjoyed being handy around the house and going fishing.
After retiring from Oahu Air, he remained active in the family business until the business was sold. In his retirement years, when he wasn’t busy taking out his grandchildren or going to parties with his wife, he enjoyed being in the kitchen. He was known for his delicious pig’s feet, tender book tripe, flavorful fishcake and tasty octopus. Also, during that certain time of year, you would find Gilbert happily picking mangos from his mango tree. He was always so generous and was known to give away the best mangos to family, friends and neighbors.
He is survived by his loving wife of over 70 years, Rose Chu Ching; sons, Vernon, Jason and Ronnie (Betsy Boyce); daughter Merna Chang (Richard); grandchildren Richard Chang (Jill), Dwayne Chang, Stacie Chang and Gilbert Boyce-Ching; great-grandchildren Maya Paige Chang and Hayden Chang; sister Myrtle Yee and brothers Bernard Ching and Herbert Ching (Rose).
A private service was held. All monetary gifts will be donated to charity.
