Hing Lim Lee was born in Canton, China on January 3, 1940. He
passed from this life on April 6, 2026. The Lee family immigrated
to Honolulu and became proud citizens on June 20, 1979. He is
lovingly remembered as “Chef Lee”, a name that stuck even after
retiring as the Executive Chef at Ciao Mein at the Hyatt Regency
Hotel. He enjoyed traveling and telling stories with his McDonald’s
group. His family and friends will miss his warm and generous
spirit.
He was pre-deceased by his wife Choy Kwa Sin Lee and survived
by son Alex Wai Leung Lee (spouse Cindy); daughters Robyn
Fung Chee Nomura (spouse John), Fung Mei Lupack (spouse
David), Fung Ping Marlene Lee-Cheng (spouse Sherwin), Jannie
Fung Kin Beaufeaux (spouse Adam); grandchildren Cheyne
(spouse Anna) and Jasmine Nomura; Meigan and John Lupack;
Dylan and Kaitlin Cheng; Hunter and Liam Beaufeaux. Great
Grandchild Emery Nomura.
