

His childhood was spent during WWII, his family life and education a daily ritual of survival and perseverance. After the war, he attended high school near Hong Kong where he would meet the girl of his dreams, May Ng.
Eddy would make a life changing journey to the United States in 1956 to work at his sister's and brother-in-law's restaurant in Colorado Springs. He would eventually get drafted in 1958 into the US army, served in Germany for two years and was honorably discharged in 1964. In 1961, he would return to Hong Kong to marry his long distance sweetheart, May. They would both return to Eddy's home in Colorado to start a family. The growing family would eventually end up in Houston, TX in 1967 with Eddy working as a cook at Lee's Den restaurant. Several years later, he followed a passion to be his own boss and he joined a partnership with three other like-minded entrepreneurs to start their own restaurant. Hoi Toy restaurant became a unique Chinese cuisine and steakhouse combination and was a mainstay in the Houston community for many years until 1989.
Following retirement, Eddy and May traveled through Europe, Mexico and Russia, remained active in the Chinese Baptist Church, became prolific gardeners sharing their vegetable bounty with many friends, and became proud grandparents.
He passed away peacefully on November 11, 2024 and leaves behind his wife of 62 years, May, sons Kenneth, David and Daniel, grandchildren Truman and Gracen Moss-Lee, along with many extended relatives and close friends.
