As a young child, she found joy in running races with her siblings at the ranch, creating cherished memories that lingered with her throughout her life. She held a heartfelt dream of being a loving wife and a devoted mother, hoping to nurture her family with care and affection. Raising her children and spending quality time with her grandchildren and great-grandchildren filled her days with immense joy and fulfillment.
It was a point of pride for her to have retired from the Chelsea Catering Company, a milestone that marked her hard work and dedication. Her adventurous spirit led her to explore beautiful destinations like Las Vegas, California, New York, the Dominican Republic, Cancun, Acapulco, and Hawaii, experiences she treasured deeply.
The song "Somos Novios" held a special place in her heart, just as her favorite color, green, brightened her days. In her free time, she immersed herself in the comforting hobbies of crocheting, playing slot machines, gardening, watching novelas, and doing word searches, finding solace and joy in each activity. Her life was a tapestry woven with love, laughter, and the sweet moments that made her who she was.
Eustolia was predeceased by her parents, Miguel Medina and Guillermina Alvarez, and her siblings, Delfino, Apolonia, Oralia, Trinidad, Jose, Guadalupe, and Cleotilde. She was also preceded in death by her children, Jose A Layton Jr., Miguel Layton, and Martha Layton Weeks.
She is survived by her siblings, Perfecto, Rita, Romana, and Juany. Eustolia leaves behind her loving daughters, Miriam Carol Layton Perez (Arthur Perez), Guillermina "Lupina" Layton (Domingo Cisneros), and Anita Layton Pauly (William G. Pauly III). Her legacy continues through her grandchildren Louise Hall, Kadhir Alvarado, Katheryn Alvarado, Kristen E. Hernandez, Valerie A. Russell, Ashley McKenzie, Lauren B. Flores, O. Michael Flores, Erika L. Gonzales, Izabella L. Gonzales, Christopher J. Paiz, Justin R. Paiz, William G. Pauly IV, Mark A. Pauly, Gregory A. Perez, and Gabriel A. Perez. Eustolia was also blessed with great-grandchildren, Ethan Hall, Emilee Martinez, Hannah Martinez, Aleena Russell, Noelle Russell, Lorelei Flores, Violet Flores, Ava Hernandez, Aaron Hernandez, Jacob McKenzie, Connor McKenzie, and Jason Paiz.
The visitation will be held at Funeraria Del Angel, located at 5100 North Fwy, Houston, TX 77022, on February 9, 2026, from 3:00 pm to 9:00 pm.
A Funeral Mass will take place at St Leo the Great Catholic Church, 2131 Lauder Rd, Houston, TX 77039, on February 10, 2026, from 10:00 am to 11:00 am.
The committal service will follow at Brookside Cemetery, Houston, TX 77039, on February 10, 2026, from 11:30 am to 12:00 pm.
Pallbearers honoring Eustolia will be Kadhir Alvarado, Jacob McKenzie, Christopher J. Paiz, Justin R. Paiz, William G. Pauly IV, Mark A. Pauly, Gregory A. Perez, and Gabriel A. Perez.
