Mary “Eileen” was born on September 5, 1944 in Franklin County, Missouri to Lloyd Charles and Elizabeth Lucille Wimmer. As the youngest child of four, Eileen and her family moved around a lot before settling in Springfield, Mo where she graduated from private high school on the campus of Southwest Missouri State College.
As a young, single woman Eileen loved to travel; she took a job at a ski factory in Seattle, Washington, then decided that was not for her so she moved back home. In Springfield, Mo. Eileen took business training then she accepted a job with Western Union that took her from Colorado to Kansas City as she said it, “I stepped off the bus with nothing but a hat box” and found an apartment on the Country Club Plaza.
As destiny would have its way, Eileen accepted a blind date from William Paul McCoy, and on February 14, 1970 that turned into 51 years of devoted marriage. Eileen, then, became an excellent homemaker; Eileen bore two children, David P. and Mary Elizabeth, and used her talent to provide for the family. Eileen, like her father, had a talent for drawing cartoons with which she eagerly did for birthday parties and painting them on the nursery walls of the church the family attended- Grandview Assembly of God.
Eileen was passionate about her talent for cartooning that she took classes in oil painting and learned how to paint mountain, ocean, and country scenes. Eileen was deeply devoted to her husband and family they were the center of her heart, second only to God in her life, she exemplified the definition of the Proverbs 31 woman.
