To sum up someone’s entire life in words, is nearly impossible. To say, you know someone like Jodi, is just that, nearly impossible! She was the true definition of one-of-a-kind. There was just no comparison. Jodi had a gift of caring and a heart that was full of unconditional love. That love included any living creature. And I mean, ANY CREATURE, that God created, especially animals. She loved her dogs as her very own flesh and blood. They were her life! The countless times of her running and screaming with fear if she just thought something had happened to one of them, but always ended in laughter and excitement. No matter who you were, where you came from, or what you were going through, she was accepting of you, and would be there no matter what, no questions asked. Well, that part isn’t so true. Because we all know Jodi could talk! So, there would be lots of questions, which would lead to hours of talks and the loudest laughter! If you were a friend to her, she was there for you and her contagious laughter could turn any situation into a fun one!
Jodi worked for Waffle House in Dallas, Texas for 18 ½ years and was given the nickname “Sparkle” from her customers. She greeted everyone with a kind word and smile. To say she was a foodie would be an understatement. I’m not sure there was a food she didn’t like. Her years of experience in the kitchen and love of cooking for others was unsurpassed. She took great pride in the recipes that were taught by
none other than the best, her mother. And man could she not only cook, but she executed and delivered some of the best dishes and was willing to share and teach what she knew. She loved going out to eat and no matter how great the food, looking forward to the dessert menu, was the cherry on top!
Meeting the love of her life, Louis Eubanks, brought greater pride to her more than anything. Family was of the utmost importance to her. Spending time with her family and loving the outdoors on quick get-a-ways; glamping in the ultimate rv, riding the trails on the ATV, cooking, and cleaning, would fill her soul beyond with happiness. Thank you, Louis, for sharing and giving her those lasting experiences and memories that filled her heart to the fullest.
With Jodi here and listening to us now, her most famous and loudest response would be, “OH, GEEEEEE!!!”
Jodi was preceded in death by her father Robert Witherspoon, mother Myrtra Ayers, stepfather Bill Ayers, brother Mark Witherspoon and sister Kelli Milkeric.
Left to cherish her memory is her husband Louis and his children Tory, Katie, Cody, Aaron, her brother Toby (Becky) Witherspoon, sister-in-law Debbie Witherspoon, nieces and nephew Charla Hodge, Lynnsey Edwards, Andrea Clark, Austin Witherspoon, numerous cousins, and her loving pet Chica.
In lieu of flowers, donations may be made to the SPCA of East Texas.
A graveside service for Jodi will be held Saturday, June 1, 2024 at 10:00 AM at Lakeview Funeral Home, 5000 W. Harrison Road, Longview, TX 75604.
