Paul Eric Fields, 62, of Covington, LA, and formerly of Flossmoor, IL, passed away on Friday, June 6, 2025, after a brief illness. He is survived by his wife, Jane Caire Fields, their two children, Kevin and Annie Fields, his sister, Carol Fields Hagen, and his brother and sister-in-law, Peter and Edie Fields. He was preceded in death by his parents, George Kevin and Jane Wennemer Fields, and his father-in-law and mother-in-law, Roland and Pie Caire. He will also be missed by his in-laws, nieces, nephews, cousins, and friends.
Paul was born in Silver Spring, MD on May 6, 1963. His family moved frequently when he was young living in Charlotte, NC; Miami, FL; Cincinnati, OH; and finally, Port Chester, NY where he spent most of his childhood and graduated from Port Chester High School. He was active in music, playing the trombone, and he also participated in drama and athletics.
As a child, Paul traveled extensively with his family and developed a love of other cultures and languages. He spent a year in Colombia as a high school exchange student where he became fluent in Spanish and graduated from Colegio la Salle in Bucaramanga. Yes, he earned two high school diplomas!
He earned his bachelor’s degree in economics from American University in 1985 and went on to graduate with his MBA from Georgetown University. Over the years, he applied his business and finance skills in the space, insurance, and health care industries. Most recently, he enjoyed teaching Spanish as a substitute teacher in Covington.
Paul and Jane met in Atlanta, GA, on a Catholic singles canoe trip along the Chestatee River. They could never agree on who first invited whom to share a canoe, but clearly the attraction was mutual. They married in New Orleans in 1999, and in 2004, Paul and Jane traveled to Guatemala to adopt Annie and Kevin.
Throughout his life, Paul enjoyed hiking, traveling, reading poetry with Jane, photography, and birding. His greatest joy, however, was his family. Paul will be remembered as a loving husband and father, a steadfast support to others during life’s ups and downs, and especially as a kind, generous, and caring individual.
Friends and relatives are invited to attend Paul’s Funeral Mass at Mary Queen of Peace Catholic Church, 1501 West Causeway Approach, Mandeville, LA, on Saturday, July 19, 2025. Visitation will be at 11:30 a.m. with the Mass starting at noon.
Paul loved walking in the woods enjoying God’s gift of nature. Donations may be made to The Nature Conservancy, https://preserve.nature.org or to Breakthrough T1D, https://www.breakthrought1d.org to support type 1 diabetes research.
