

Dixie graduated from Midland High School and always loved her Bulldogs. She earned a B.S. from Hardin-Simmons University where she majored in Speech and Spanish and minored in Secondary Education. Dixie always enjoyed her Spanish and used it any time she could. Her travels to Mexico, Colombia, Ecuador and Costa Rica gave her plenty of opportunities for practice.
She was preceded in death by her parents and her brother, Bill Mims. His untimely accident in high school, which paralyzed him, was a life changer for the Mims family. After her parents’ death, Dixie was always there to help him in any way and became a great caretaker for him until his death.
At that time, James Mims, her cousin, and his wife, Mary Mims, “adopted” Dixie into their family and for 22 years were very active in her life, supporting her in any way they could. They will miss her greatly.
She is also survived by several cousins.
Dixie was active in many community organizations and was a supporter of anything that helped Midland. She truly loved this community and was very invested in keeping Midland a great place to live. She appreciated her Midland heritage, which dated from her great grandparents, who settled here in the 1880’s.
She made her home at Saddleridge, in 2005, and, as one of their ambassadors, did so much to welcome new residents and to make those living there feel special. She endeared herself to many through this endeavor. She also loved her Girl Scouts and did everything she could to support and promote them.
She was a prolific thank you note writer, as her momma taught her so well, and was good to all of those in her family, taking care to recognize any effort of kindness and hospitality with a “note”. She was a sincere person, always willing with a kind word.
The family wishes to thank her caregivers, Martha Ramirez, Veronica Bordayo, Helen Brown, Mirella Chavez, Ruby Garcia, Minerva Martinez, Oraya McMaryion, Manda Ramirez, and Sylvia Rodriguez for their support and friendship to Dixie over these last couple of years. She loved them and depended on them and they took great care of her. We’d also like to thank the staff at Saddleridge for their care and support.
Visitation will be at Ellis Funeral Home, Friday, from 10:00 a.m. to 9:00 p.m. The service will be Saturday, March 30th, at First Baptist Church Chapel, at 11:00 a.m.
Memorials may be made to The Bill Mims Scholarship Fund through the Permian Basin Area Foundation, 200 N. Loraine, Midland Texas; The Girl Scouts, 901 W. Dengar, Midland Texas; or to the charity of your choice.
