

Nichole Marie Nielson was born on June 30, 1973. Her mom was hoping it would be one day later so they could share a birthday, but Nichole had other plans. She was welcomed into the world by her mother and father, Joan and Lewis W. Rollins. Joan is daughter of Claude and Agnes Shephard and Lewis W. Rollins is the son of Lewis and Mary Rollins.
While she started life in Escondido, CA, she lived in various places as a child as her father served in the United States Marine Corps. They got to see places in the south (where she found her love for seafood) and in California before they ended up in Utah.
Nichole graduated from Skyline High School in 1991 and often talked about how wonderful the school and her fellow students were. She really loved her time there. She especially loved the chance to sing with Highlights and Madrigals. In addition to being a truly gifted singer, she learned to play the piano.
After high school she was an EMT and became an office manager. Her aunt, Mary Sue Lyons had asked Nichole to accompany a Pioneer Trek for their stake as an EMT. There, Nichole met her future husband, Trevor Nielson. Not wanting to be his second wife, the Pioneer Trek lovingly called her Aunt NickNak, a nickname she would embrace for the of her life.
Soon after meeting, Nichole and Trevor fell in love and were married in the Salt Lake City Temple on May 18, 1995. Two years after they were married, Nichole was so excited to give birth to her first daughter, Mackenzie. Three more years and she was again so happy to give birth to Ashley. She loved being a mother and was thrilled to have two beautiful daughters.
Nichole always actively supported her daughters through their extracurriculars and schooling. Through that, she served in one of her favorite positions, Treasurer for the PTA, a job she volunteered at until just last year. She found great happiness helping in this role and felt happy to donate her time.
Nichole also worked for a time with her mom at the White Pine Grooming shop. There, Nichole and her daughters worked with dogs, another one of her great loves in life. She had three dogs, Maggie, Phoebe and Winnie whom she loved dearly.
Anyone that knew Nichole knew of her love of music. She loved to sing, play piano and listen. She would spend hours in her backyard gardening, singing loudly with her headphones in. She was also an avid reader, and would commonly finish a book in a single sitting. She baked desserts with a passion. Her pies were a treat that everyone loved to enjoy.
One of Nichole’s special favorites at the end of the day was to sit in her chair on the porch, listening to true-crime podcasts, saying hi to her neighbors and watching the sunset.
Nichole is survived by her husband, Trevor Nielson. Daughter Mackenzie Lemmon and her spouse Samantha Lemmon and grandson Callahan. Daughter Ashley Nielson. Grandmother Agnes Shephard. Mother Joan Rollins and father Lewis Rollins. Brother Lewis T. Rollins.
She will be greatly missed by all who knew and loved her.
