Soon Hyang died on November 20, 2020 after a long fight with Alzheimer’s and recently overcoming COVID-19. She eventually passed from an Acute MI. She was 95. Soon Hyang was born on April 7th, 1925 in South Korea and was preceded in death by her husband of 47 years, Ho Chan Chung. Her husband was well educated but had limitations due to his physical disability. Together they have 6 living children and had raised them while partaking in financial support of her family. She was a warrior in supporting her family and had great strength.
She had a total of 12 grandchildren, 6 in Korea and 3 Australia, but in 1989, she moved to the US to take care of her younger grandchildren, Scott and Hanna. Another one of her children moved to the US, she also take care of her child, Joseph. Her two younger daughters, Unchu and Gaeryung constantly talk about how their mother have supported them by taking care of their children. She eventually received citizenship in the US, learned English, and learned to love the American diet. Some of her favorites were El Pollo Loco, HomeTown Buffet, and Sizzlers.
During the last several years as her Alzheimer’s was worsening, her son-in-law, Sehyon, took care of her full time. When her condition worsened, we decided to move her into the nursing home. At that time, an unfortunate event occurred as Sehyon lost his life to suicide. He is survived by his wife, Unchu, and daughter and son, Hanna and Scott. As Soon Hyang moved into the nursing home, she fought to be with her family. The family visit her twice a while and showered her as she did not allow others to touch her. Often times she would say sorry and thank you for taking care of me to her daughters and grandchildren. The family loved the last opportunities and serve and show love to her. Some of the last few people she remembered were her son-in-law (Sehyon), daughter (Unchu and Gaeryung), and grandchildren (Scott, Hanna, and Joseph).
Her life is full of adventure and strength and she gives all Thanks to the Lord as her life would not have been the same if she had a personal relationship with Jesus. Her person relationship with the Lord was witnessed as her family, especially her grandchildren, saw her praying and reading/copying the Bible daily and worshipping the Lord with a full heart and tears. She devoted herself to the Lord. The family knows she is in peace and in her true home in heaven with our Lord and Savior.
