She was born on November 24, 1929, in Rose Hill (Manor), Texas to Otto and Viola (Prinz) Pfeil. She grew up in many small Texas towns since her father was a cotton ginner. In September 1946, she married the love of her life, Walter Schoen. They were blessed with five children.
Ruby worked many jobs during her lifetime as a field hand (she picked and chopped cotton from a young age), nanny, UT Campus concession worker, cake decorator and baker at Mrs. Johnson’s Bakery, and for over 38 years she worked for the same company in the publishing industry, throughout its name changes, as she started at the Steck Company in downtown Austin and ended up working for Hart Graphics in far North Austin.
Ruby was a wonderful wife, mother and grandmother, a great cook, seamstress, carpenter and a “jack of all trades”. She was good at everything she put her mind to and accomplished so much throughout her lifetime. She spent her entire life working in and out of the home. Her work ethic was beyond measure. Up until very recently, she was still mowing grass and running her beloved DR weed trimmer.
Ruby is preceded in death by her husband, parents, her sister, Ida Mae Anderson, two children, Carol Lawrence and Robert Schoen, and two sons-in-law, John Dunn and Ronnie Lawrence.
She is survived by three children, Judy Dunn, Beverly Lawrence and Bryan Schoen; one son-in-law, Allan Lawrence; three siblings, Doris Reinhardt, Gloria Kuempel and Stanley Pfeil (Judy); and sisters-in-law, Becky Schoen and Dorothy Daniels. She is also survived by her eight grandchildren, Shawn Lehne (Brian), Alanna Lawrence, Buddy Lawrence (Jessica), Ronald Lawrence, Robert Lawrence, Randy Lawrence (Patty), Robyn Nobles (Sam) and Robert Schoen (Julie); twenty-three great-grandchildren, ten great-great-grandchildren, and many nieces and nephews.
Honoring Ruby as pallbearers will be Buddy Lawrence, Brian Lehne, Anthony Barcuch, Ronald Lawrence, Robert Lawrence, Randy Lawrence, Bob Schoen and Dusty Lehne.
The funeral service will be held at 10:00 a.m. on Tuesday, December 30, 2025 at Cook-Walden/ Capital Parks Funeral Home in Pflugerville. Following the service, she will be laid to rest at Cook-Walden/Capital Parks Cemetery.
