

Ronald Choy Hing, who took his final lap on September 14, 2024, at the age of 85. Ronald was born on January 13, 1939, in Portland, Oregon, to Willie and Ada Hing. He was raised in the Ladd’s Addition neighborhood.
Ronald attended Washington High School and spent a year at Oregon State University before revving up his career. He co-owned the Mandarin restaurant with his brother, a family establishment originally built by their father and passed down to them. Later, he shifted gears to become a salesman for Pacific Seafood, where he catered to the Chinese community. He was also responsible for opening the first Chinese food delis in Fred Meyer.
He was a proud member of the Rose City Corvette Club, showcasing his beloved 1960 Corvette, which earned him numerous awards, as well as showing off his two 1969 Buick Rivieras at various car shows. Ronald’s enthusiasm didn’t stop at the car shows; he was also a major collector of Snoopy memorabilia and loved hitting the open road in his RV, discovering new dining spots along the way.
Ronald will be remembered for his love of laughter and his willingness to lend a helping hand to friends. He cherished time spent with loved ones and found true joy at car shows, where he could share his passion with fellow enthusiasts. He had a passion for flying and a vision for customizing cars. Ronald would want to be remembered smiling behind the wheel of his Corvette, radiating the joy he found in life and his love for adventure.
Ronald is survived by his nephew Todd Hing, his wife Selena, and their son Asher; his niece Marylou Ignowski, her husband Mark, and their sons Ian and Beckett; as well as numerous cousins and close friends whom he considered family. He was preceded in death by his father, Willie; his mother, Ada; and his brother, Edward.
A memorial service will be held on Sunday, October 27, 2024, at 2 PM, followed by a reception at Lincoln Memorial Park and Funeral in Portland, Oregon.
