Carol was born in Jackson, Mississippi, on December 27, 1954, to Mary Virginia Simmons and Peter Paul Buescher. She attended Callaway High School, received her Bachelor’s Degree from Mississippi State University and Master’s Degree from University of Southern Mississippi.
Carol married Randal Embrey, and together they had two children, Mark and Rachel. She enjoyed a fulfilling career as a dietitian before happily retiring.
Carol lived her life grounded in faith and family. She was an active member of Faith United Methodist Church in Spring, Texas. Living life to the fullest, Carol sought fellowship and deeply cherished the time she was given. Her kind heart and deep love for her family and friends will stand as a testament to the legacy she leaves behind.
Carol is survived by her son, Mark Embrey (Emily); her daughter, Rachel Embrey; and her beloved grandson, Brooks (11). She is also survived by her sister, Claire Henson; and her brothers, Bob Buescher (Tina) and Paul Buescher (Barbara). Carol was predeceased by her husband, Randal Embrey.
Her family was the joy of her life, with her greatest blessings being her children and the one who lovingly called her “Grandma.”
Funeral services will be held at Parkway Funeral Home (1161 Highland Colony Pkwy, Ridgeland, MS) on Friday, February 6, 2026, at 12:30 p.m. Visitation for Carol Buescher Embrey will take place at Parkway Funeral Home (1161 Highland Colony Pkwy, Ridgeland, MS) on Friday, February 6, 2026, from 10:00 a.m. to 12:00 p.m.
Memorial donations may be made in Carol’s name to Faith United Methodist Church (2403 Rayford Road, Spring TX 77386).
