Mr. Coy retired from the U.S. Air Force in 1984 after nearly 28 years of service. He later worked and retired from the Abilene State School. Ernesto was a member of St. Francis Catholic Church in Abilene, and he enjoyed fishing, playing chess, traveling and telling a good joke. He enjoyed a good conversation over a hot cup of coffee and was always there to help others.
He was preceded in death by his first wife, Katie Coy and two sons, Abel Coy and Robert Coy. His brothers Arturo, Alfredo, Pedro and Ricardo.
He is survived by his wife, Paula Coy; daughter, Norma Gonzales, and husband Steven R.; grandchildren: Alexis, Patrick, Jaime, Carey, Kristian, Jacob and Michael; many great grandchildren; sisters: Aurora Coy Gossett, Delia Coy, Olga De La Rosa, Guillermo Coy, Ernestina Coy Ramirez, Marjorie Garza Boxwell and Belinda Garza.
A visitation will be held from 5:00 PM – 7:00 PM on Thursday, June 11, 2026, at Elliott-Hamil Funeral Home, 5701 US Hwy 277 South in Abilene. Funeral services will be 11:00 AM Friday, June 12, 2026, at Elliott-Hamil Funeral Home Chapel. Interment will follow with full military honors at Abilene Municipal Cemetery.
