Mrs. Adkins was born September 15, 1925 in Harriman, Tennessee to the late Reverend George Thomas Scarbrough and Grace Harvey Scarbrough. She is preceded in death by brothers David Scarbrough, Carlyle Scarbrough and sister Margaret Scarbrough Farr.
Betty married the late Reverend Luther E. Adkins in 1945 who pastored a number of congregations in East Tennessee and Alabama until his death in 1985.
Betty’s eldest child was Luther E. Adkins, Jr. She is survived by her daughter and son-in-law Anna Grace Fieldson and Jeffrey Fieldson, as well as her granddaughter Emily Grace Fieldson and her husband Christopher Remer.
Betty was an avid seamstress all her life, loved reciting poetry and could spin the best of yarns. Her homestyle cooking and old family recipes are cherished and frequently requested by both family and friends.
The family thanks the staff of Holston Health and Rehabilitation (Knoxville) and Grace/Franklin Wellness and Rehabilitation (Franklin) for the love and care Betty received the last 2 years.
A graveside service will be held at Sherwood Memorial Gardens, in the Garden of the Apostles, Knoxville, Tennessee on Saturday, February 6, 2021 at 3pm with Pastor Andrew Ray presiding. In lieu of flowers, memorials in her honor may be sent to Antioch Baptist Church (5709 N Broadway St. Knoxville, TN 37918)
