

Erik was born in Copenhagen, Denmark and moved to Scarborough, Ontario, Canada with his family as a young boy in 1947.
Always a man of faith, he was baptized on October 10, 1937, in Copenhagen, and was confirmed on November 16, 1958, in Scarborough.
He and Isabelle, his wife of 66 years, grew up in the same neighborhood. Isabelle was the love of his life. They were married in 1959, had two children in Canada (Lynn and Tracey), then moved to Apopka, Florida in 1966 and had Michael just four weeks after they arrived. They moved to Florida along with Erik’s parents and youngest sister to re-form their nursery business in the Foliage Capital of the World. He was a horticulturist by trade as was his father and other relatives. He definitely had a green thumb and could also fix almost anything.
Erik enjoyed watching sports, tinkering in his workshop, woodworking, gardening, boating, and a very rare steak. Most of all, he enjoyed spending time with his family. He was devoted to his family, to his church, and to the Lord. He was very active in his church, serving in many roles including usher, Elder, and all-around handyman. He was loved by all who had the pleasure to know him, and he will be sorely missed.
He is survived by his childhood sweetheart Isabelle (Merklinger) Jensen, his daughters Lynn Jensen and Tracey (Jeff) Shepherd, his son Michael (Deana) Jensen, his sisters Lise (Wes) Clarke, Ulla Jensen, and Susanne (Gordon) Norfleet, his sister-in-law Sharon Jensen, his grandchildren Chad (Megan) Jensen, Erik (Brittany) Jensen, Kristen (Josh) Pyles, Hollie (Christian) Gonzalez, and Natalie Shepherd, and his great-grandchildren Bentley, Avianna, Elliana, Emma, Harmoni, Parker, Sadie, and Cayson. He was preceded in death by his parents Ivan and Ruth Jensen and his brother, Poul Jensen.
A celebration of life will be held at Ascension Lutheran Church in Casselberry, FL on Monday, April 13, 2026. Visitation at 10:30AM and service at 11:00AM with a luncheon to follow. In lieu of flowers, memorial gifts can be sent to Ascension Lutheran Church. Arrangements by Baldwin Fairchild.
