Mark Carter Jackstadt, also known as Yank, was born May 10, 1945 in Huntington, NY and died April 3, 2024 in Arlington, Texas, his home for the last sixty years. Mark died of heart failure Wednesday after being diagnosed with a rare disease called Inclusion Body Myositis five years ago. He was 78.
Mark grew up in upstate New York and graduated with the bold and beautiful class of 63 at Plattsburgh High School. His mother was a college registrar who was a renowned cook in Plattsburgh and gifted him with a lifelong interest in the taste and beauty of creating good food for other people to enjoy. His father was an educator-athletic and social. Along with his two younger brothers, he grew up skiing the mountains of New York.
He came to visit Texas at the age of eighteen, started making friends, found a job in concrete construction and worked many years representing the Terry J. Fricks Company as a superintendent.
Mark met his future wife, Judy, in 1969. They married in 1974 and would have celebrated their 50th wedding anniversary in October of this year.
Mark enjoyed duck hunting, socializing with friends, and joked about being a lifelong short order cook for Judy (who did not cook), his son Grant and his daughter Sarah.
Mark and Judy loved to travel the world together and visit many countries including Italy, France, Greece, Scotland, China, Russia, Finland and Spain-his favorite.
Mark was a joker and loved to throw in an off color remark to make people laugh.
There will be no formal service, but there will be a celebration of his life at the annual Grant Jackstadt Memorial Crawfish Boil on April 13 at the No Frills Grill, 4914 Little Road in Arlington.
Mark is survived by his wife Judy, daughter Sarah of Arlington, brother Eric (Mary T.) of Plattsburgh, brother Kirk (Leta) of Dallas and many nieces and nephews that grew up laughing at the shocking things said to them by their crazy Uncle Mark.
Mark was preceded in death by his precious son Grant, his mother, Dorothy ‘Billie’ (Hillberg) Jackstadt, and his father, Ellsworth (Yockie) Jackstadt.
