Jamie Paulette Collins, 70, of Dallas, Texas, passed away peacefully with two of her nieces by her side on Saturday, November 8, 2025. She was born on April 20, 1955, in Beaumont, Texas, to the late James Paul Collins and Loraine (Hoffpauir) Collins.
Jamie was a parishioner at St. Patrick’s Catholic Church in Dallas, Texas. She lived a life filled with creativity and adventure. She had a deep love for travel, especially to places where she could be near the water. The beach was her happy place and a source of peace and joy. She cherished every moment spent there with her family. Over the years, she delighted in exploring new destinations through many cruises from Mexico to Hawaii, collecting memories as vibrant and sweet as her own spirit. In addition, she loved to share her memories of visiting Ireland, her family’s heritage.
Jamie owned and operated Jamie’s Chocolates, where she crafted her many sweet treats like chocolate truffles, homemade peanut butter cups, oatmeal fudge, and pecan turtles. Her sweets were as rich and delightful as the love she shared with those around her. Friends and family will remember her for her kindness, creativity, and the genuine joy she brought into every room.
Jamie was preceded in death by her beloved parents. She is survived by her siblings, Mark Collins and wife Vicki, Donna Younger, Colleen Brown and husband Kelly, and Kevin Collins and wife Martha; ten nieces and nephews; and a host of extended family members and dear friends who will forever hold her close in their hearts.
Jamie’s presence was a blessing to all who knew her. She will be deeply missed, yet her spirit will continue to shine through the love and memories she leaves behind.
