She was the cherished daughter of Mary and John Moffatt and the younger sister of Mary Pierce and Kathleen Moffatt. Eileen was also proud to be the godmother to John L. Pierce.
Growing up, Eileen attended Holy Cross Grammar School and graduated from Catherine McAuley High School. She pursued her passion for teaching by earning a degree in Early Childhood Education from St. Joseph's College in 1972. Eileen had a bright curiosity about the world, especially when it came to science. One year, as the school's science teacher, she took home baby ducklings during spring break until a farmer could collect them. Eileen was always tuned in to the weather—never missing a forecast! Whether it was the angle of the sun or how wind speed affected temperatures, she loved discussing it all. Gardening was another one of her passions; she found joy in planting seeds and bulbs, transforming her apartment into a lively oasis filled with a variety of plants. Eileen was happiest when she was at the beach, whether it was Manhattan Beach or Montauk.
Her generous spirit truly knew no bounds, as she supported numerous charities. Eileen loved gathering with friends and family to chat about everything happening in the world and in their neighborhood, always with warmth and enthusiasm. She left a lasting impression on everyone who knew her.
