

Born on February 26, 1946, in Salisbury, North Carolina, Vickie was the daughter of the late Rufus Lafoy and Ethel Hager Lafoy. At just sixteen years old, she married the love of her life, George Ernsberger, beginning a remarkable journey together that spanned 62 years. Their enduring love story became the foundation of a close-knit family and a life filled with cherished memories.
Vickie worked alongside her husband at the Dairy Barn, where together they served their community and created countless smiles. She was also a talented florist whose creativity and eye for beauty brought joy to many. Whether arranging flowers or preparing for a family gathering, she had a gift for making every occasion feel special.
Above all else, Vickie treasured her family. She loved hosting gatherings with family and friends, welcoming everyone with warmth and hospitality. Many treasured memories were made on the screen porch she loved so much, where she enjoyed relaxing on her swing and taking in the beautiful view while surrounded by those she loved.
In addition to her parents, Vickie was preceded in death by her husband, George Ernsberger, and her siblings, Butch Lafoy, Bobby Lafoy, and Peggy Bailes.
She is survived by her four children, Sonny Ernsberger and wife Vickie, Rodney Ernsberger and wife Lundee, Michelle Phelps and husband Scott, and Kristopher Ernsberger and wife Elaina. She was a proud grandmother to Jessie, Taylor, Jordan, Justin, Sammy Cate, Dalton, Addison, and Noah, and a beloved great-grandmother to Austin, Jason, Maddox, Ryder, and soon-to-arrive Nolan.
Vickie's legacy is one of love, devotion, kindness, and family. Her gentle spirit, warm smile, and unwavering love for those around her will be deeply missed and forever remembered by all who knew her.
The family will greet friends on Thursday, June 11, 2026 from 1pm to 3pm at McEwen Funeral & Cremation Services at Forest Lawn West located at 4601 Freedom Drive in Charlotte.
A celebration of Vickie's life will begin at 3pm in the chapel with burial at Forest Lawn West Cemetery following the service.
