

Joyce was born on February 13, 1941, in Columbia, Missouri, to Alfred and Ellen (Johnson) Schroeder. A proud lifelong Missourian, Joyce graduated from Hallsville High School in 1959.
In 1958, Joyce married Finley Adkisson and together they were blessed with three daughters: Sheri, Lisa, and Michelle. They lived on a farm, growing crops and raising livestock outside of Sturgeon. In 1980, Joyce moved to Columbia with her three girls. In 1984, Joyce married Rich Huber. They shared many joyful years together until Rich’s passing in 2001.
Joyce spent 25 years working as the office manager at Coca-Cola Bottling Company. Her strong work ethic and dedication earned her the respect of everyone she worked with. Retirement, however, didn’t slow her down. She soon joined her daughter Lisa at State Farm Insurance, where she often joked, she was the “longest standing and best employee.”
A woman of deep faith, Joyce was an active and devoted member of Alive in Christ Lutheran Church in Columbia. Her creativity shone through her passion for painting and as a talented artist, her artwork was proudly displayed in various Boone County art shows. In her earlier years, she was an avid golfer and continued to enjoy the sport as an enthusiastic viewer every weekend. She also had a deep love for travel, always eager for a new adventure, especially with her longtime companion of 20 years, Bob Dolliver. Together they traveled all over the world, including to Australia, New Zealand and around Europe, enjoying different activities such as parasailing and white-water rafting.
Above all, Joyce was a fiercely loving mother, grandmother, and great-grandmother. She was selfless in every sense, always placing her family’s happiness and well-being above her own. Her love, strength, and unwavering support shaped the lives of her children, grandchildren, and great-grandchildren, leaving a legacy that will live on for generations.
She is survived by her daughters: Sheri (Steven) Parisi of Defiance, MO; Lisa (John) Cravens of Columbia, MO; and Michelle Adkisson of Columbia, MO. She also leaves behind four beloved grandchildren: Hannah (Jesse) Reynolds of Hartsburg, MO; Grant (Victoria) House of Wentzville, MO; Zachary (Amber) Cravens of Columbia, MO and Whitney (Andriy) Hurina of Ukraine; four great-grandchildren: Gavin, Makinley, Gabriel, and Scout and cherished bonus kids, grand-kids, and great-grandkids: Sheila, Rick (Kelli), Josh (Monica), Hannah, Kayla (Avery), Sky, and Foster. She is also survived by her sister-in-law, Diane Schroeder, nieces, nephews, cousins, extended family members, and many dear friends. She was preceded in death by her parents, her brother Ron Schroeder, Finley Adkisson, Rich Huber and Bob Dolliver.
In lieu of flowers, memorial contributions may be made to the Boone County Family Resources or Central Missouri Subcontracting Enterprises, organizations close to Joyce’s heart.
Words of comfort and support may be shared with the family at the visitation, which will be Tuesday, September 30, from 10:00 a.m. to 12:00 p.m. at Alive in Christ Lutheran Church in Columbia, MO. Afterwards, a Celebration of Life honoring Joyce’s life will begin at 12:00 p.m., followed by a graveside service at Memorial Park Cemetery in Columbia, MO.
