Sandra Sue Polichetti was born on September 6, 1937 in El Paso, Texas, the only child of Sallie Sue and Amerigo Polichetti. She spent most of her younger years living near compressor stations along the gas pipeline between El Paso and Tucson, Arizona except for a brief time in Norfolk, Virginia during World War II. After graduating high school, Sandy attended the University of Arizona in Tucson. Upon the sudden death of her father during her freshman year of college, Sandy left school and took jobs at a local savings and loan company, TV Station and eventually the El Paso Natural Gas Company. While working there, she met Frank Jakubik and they were married on July 20, 1963. Over the following years, they welcomed 3 children, Sallie, J.J., and Paul, and lived across the southwest -- in Tucson, San Jose, San Antonio, Tucson again, and then retired in Carrollton, TX.
Sandy’s passion was her family. She tirelessly devoted herself to raising her children and volunteering in their church, schools and community. She was the life and light of her family. She never met a stranger and made friends with people from all walks of life with her outgoing personality and exuberant style.
Upon moving to Carrollton, Sandy joyfully volunteered at St. Ann’s Catholic Church, where she assisted with the Religious Education program, participated in the Christ Renews His Parish retreat, and served as a eucharistic minister. She loved cooking for friends and family, playing games and telling stories, and was happiest spending time with her grandkids: Jason and Jacob Garza, Annika and Collin Jakubik, and Connor, Maddie Sue and Jessica Jakubik.
Sandy died on March 3, 2021 at CHRISTUS St. Joseph Village in Coppell, TX from complications of late-stage dementia. A memorial service will be held Friday, March 19th at 2 pm in the chapel at the St. Ann Catholic Parish in Coppell.
