While in Dallas, Eunice finished her degree in Education from University of North Texas while raising her five children and taught fifth grade at St. Monica Catholic School for many years. After retiring from teaching, Eunice volunteered as an Ambassador at the DFW airport for 15 years.
Eunice’s home was always a welcoming place for friends and family to gather; her cookie jar was always full and she was known for her delicious cheese grits. Her grandkids loved spending time in and around the pool in her backyard.
In 2018, Eunice moved to the Forum at Park Lane where she made many good friends. She was a great bridge partner and completed the crossword puzzle and Wordle daily; her mind was sharp until the end.
Eunice was her doctor’s longest-surviving patient with non-Hodgkin’s lymphoma, which she battled for almost 20 years.
She is survived by sons Steve (Terry), Tom (Reneé) and David; daughter Julie; grandchildren Christopher (Jennifer), Jennifer (John), Sarah, Stephanie, Laura Gardner (Nick), Mark (Megan), Mary, Carolyn Bell (Nathan), Karen Wilson, Melissa, Clay and Hanna Pitts (Michael); great-grandchildren Noah and Joshua Dyer, Benjamin, Hannah Moriarty, Henry and brothers Art and Charles Arens. She was preceded in death by her husband of 61 years, Clayton, her eldest son Michael, brothers Edward, Daniel, Paul and sisters Beatrice and Eleanor.
