To my beautiful Eileen,
we will miss your energetic spirit and funny personality , you were always there for everyone and it was because of you I was able to have a long distance wedding in NY as you took on the role as wedding planner which we definitely needed from Georgia! Mark and I will always be grateful. As I watch the photos, a void of sadness appears since you are not among us but also a joy of what a beautiful fun life you had ! so many photos of dancing with my dear cousin Nicky , friends and family who loved and cherished you .
What a LEGACY !! Love forever Angela

I will muster all the necessary strength to say a few words about my mother in law, Eileen. For the last 11 years, since Adam and I got together, Eileen considered me as her daughter and treated me as such. I am very grateful for that.

I remember when I first met Eileen. I was nervous meeting Adam`s parents. I said hello to everyone and I saw Eileen in the kitchen cooking....what she does best. I don`t remember saying hello to her. When it came time for dinner, she sat right next me...we did not talk. Finally she turns to me and said...would you like a stuff mushroom? Of course I said yes. It wasn't till years later that I asked her, why didn't you talk to me when we first met? She said, Adam told me not to talk to you.

She was really passionate about her family. Her husband, Nick, married for almost 50 yrs and her son Adam. They were her top priority for sure. I see where Adam gets his strength from. He will always be one of the best people I will ever meet in this world and that is to your credit Eileen. He is a strong man and he was raised by a strong woman.

You’ve shown me the love that is food. And that there isn’t a situation in life that couldn’t be improved by a glass of martini, no vermouth, neat, with a twist, ice on the side. You are a brilliant and beautiful chef. You make the type of food that people yearn to be in your kitchen. You provide the company that people don’t want to leave. And when they do, they will not leave empty handed.

While I’m happy that she’s no longer in the pain that she’d been recently experiencing, her absence has left a void in our lives that we will feel for the rest of our lives.

Mom, miss girl, I’m going miss your advice, your generosity, your sense of humor, and your love.

Love,
Cindy

Breakfast with our Dear friend!

My sweet Eileen,

My precious niece, my dear friend, my "Miss Girl". How will I fill the gaps you left in my heart and in my soul. We shared so much of our lives and for so long we remained loyal to each other. I gave you part of me that no one else had and you reciprocated likewise. Every fiber of my being will mourn your lose for as long as I remain on this earth.

Now, rest, rejoice with parents, kiss Drake for me and tell him, his mom and dad that I look forward to joining all of you. Rest my sweet friend, rest in the peace that you so deserve, your suffering is over. Go into the light by His love and rest in His embrace.

Today my heart is aching because I’ve lost one of my dearest friends way too early! Eileen was a kind, caring, and loving person! She was like a sister to me, always showing concern about me and what was happening in my life! We’ve laughed, cried, and even gotten angry together! I will never forget the time we sat together with our husbands, drinking and composing a letter of resignation as PTA Presidents. That was a night to remember! We laughed together when we all came to her house one day for breakfast, and Judy came in her pajamas! (A private joke) Eileen was a very funny person and she and Nick were the life of every Party! Their love and commitment to each other was admired by many! Eileen loved her Nickie and always let us know how much she appreciated everything he did for her. I love you Eileen and will miss you immensely! God Bless you and may you Rest In Peace, now free of pain and fear!
Hold onto your many wonderful memories Nick, as they will help you get through this very difficult time!

We remember Greek Easter celebrations at Nicky & Eileen's home. Eileen was always the vibrant, gracious host whose alter ego 'Miss Girl' always kept us laughing.
Our heartfelt condolences,

I had the good fortune of having Eileen as a friend and have very nice memories of times I enjoyed with her and Nick. She really knew all the best restaurants and what was good there especially Crab Trap for their fried scallops. She was loved by me and my family, whenever I helped Nick fix something she would always call me “Dan Dan the fix it man”. Rest In Peace Eileen, I will truly miss you.
