Sally was born April 11, 1926 in Ogden, Utah to Andrew and Alberta Clark. She graduated from the University of Utah in 1947, with a degree in dietetics. Sally was a Delta Gamma and involved in student government as a class officer. She left Utah to attend Columbia University in NYC and graduated in 1949 with a Master’s Degree in Institutional Management.
Sally returned to Utah to marry Jack N. Birk on June 17, 1950. They celebrated their 61st wedding anniversary this year. Jack and Sally lived in Dragerton, UT, Palo Alto, CA and Pittsburgh, PA before moving to Duluth in 1971. She worked for the University of Utah, Westinghouse, and Stouffer’s as a dietician.
Sally was active in the Duluth community through her work at Northwood Children’s Home, the Salvation Army, the Duluth Women’s Club, PEO, the Duluth East High PTA, and an active member at St. Paul’s Episcopal Church.
She was happiest in the kitchen, whether her own, work, or at church. Sally will be remembered for her bright smile, her ability to laugh at herself, and her delicious pecan brittle.
Sally was preceded in death by her parents; her brother, Jerry Clark and sister, Barbara Hoiles.
She is survived by her loving husband of 61 years, Jack; three daughters, Judith (Robert) Kridle, of Oakland, CA, Peg Birk, of Minneapolis and Marianne (Mike) Kenfield, of Edina; six grandchildren,
Liliana (Brian) Titterton, James Kridle, Lars (Maren) Leafblad, Megan (Michael Gottschalk) Leafblad,
Drew Kenfield and Katie Kenfield; three great-grandchildren, Bergen, Annika and Ingrid Leafblad.
In lieu of flowers memorials may be given to St. Paul’s Episcopal Church.
