

Eugene Singletary Sr. (Gene) passed away peacefully on Thursday Feb 4, 2011, at his Davie, Fl. home, surrounded by his family.
Born in 1921, in Cairo, Ga., he moved to Miami with his family at age 12. Gene graduated from Miami Edison High School and in 1941 enlisted in the Army Air Force and served with the 107st Airborne Division in the European Theatre. As a Master Sergeant, Gene was responsible for the physical conditioning program of his entire company. He organized a boxing team which toured England and Europe performing exhibition matches for the troops. He received numerous awards including the Bronze Star and was honorably discharged in 1945.
In 1947 , when his mother Alice Estes opened Estes Restaurant in Allapatta he began working there in the bakery and was promoted to the head chef position a few years later.
In 1955, Gene opened his own business, Gene’s Catering Service, and was a highly successful caterer in the South Florida area until he retired in 1975.
He was preceded in death by his wife of 67 years, Mary Ellen, who passed away last year at the age of 89.
He believed that being with his family, cooking dinner for everyone at “Lake Singletary”, laughing and sipping a cold beer on a hot summer day with a bass on the end of his line were life’s greatest pleasures.
He is survived by his 6 children
