Cathy Davies was a loving wife and mother who was taken from this earth way too early. She was born to a farmer Delme and nurse Dilys in the southwest Wales community of Camarthen. Cathy had an unparalleled zest for life and a curiosity to see the world, which led to travels to Switzerland, Australia, Hong Kong and the Caribbean before she finally met her husband Dennis and settled in the Dallas Fort Worth Metroplex.
During her travels Cathy touched so many lives in such a positive manner. Her outgoing personality and her magnanimous heart along with an infectious laugh were staples that characterized her. Anyone who came in contact with Cathy immediately knew how special and unique of a person she was and she immediately made them feel special and unique.
Cathy was a classically trained chef who studied at Le Cordon Bleu Culinary Institute in Paris France. She loved cooking as much as she did traveling and worked as a private chef on private yachts, for catering companies and for individuals throughout the world. Her culinary skills brought her to Dallas where she met Dennis in 2003. The two were married in 2005 and tried unsuccessfully to start a family until their “miracle baby” Carys was born in 2011.
Cathy was a proud mother who was rarely seen without Carys at her side. She loved spending time with her family so much that she was willing to give up her passion of being a chef to spend more time with her daughter and husband. She successfully started her own business in 2013. Cathy unexpectedly died of Stage 4 cancer, which rapidly spread throughout her body, on October 24, 2016.
Cathy is survived by her mother Dilys and grandmother Mae in Wales, her beautiful daughter and loving husband who adored her more than anything and her brother Mark and his wife Tracey and their son Jack.
