She was born in Baytown, TX to Julian and Josefa Miranda on November 3, 1928. She graduated from Our Lady of Guadalupe and continued to support the school. She married Julian R. Mendez and raised 7 children. She was a devoted wife, mother and Catholic. She was an active parishioner at St. Ambrose Church and formerly at Resurrection Church. She was a member of the Guadalupanas, Altar Society and was a Eucharistic Minister. In her early years, she worked at Myers Spalvi Manufacturing doing upholstery where she made friends with several coworkers which continued until she passed. When the children were young, she would spend time with friends to sew outfits and take the kids to the park for picnics. Minnie was always on the go!! Family was always important to her, not only her children, but her sisters also. She liked visiting and she felt her independence was interrupted when she could no longer drive across town to visit them.
She and Julian traveled to Europe, Brazil and went on cruises, they also enjoyed going to visit family in Bay City, Victoria, Wisconsin and Monterrey, Mexico. She continued to travel with her family and the St. Patrick’s Young at Heart group to many different states and countries. She enjoyed being a member of the “elite group of ladies” called “Club de la Amistad” for many years. She made long-time friends and always looked forward to the monthly celebrations. She volunteered with M.D. Anderson Children’s Art Project to support both her daughter and granddaughter. She enjoyed going to the beach with friends and family. While her children were in school, she was always involved and volunteered for many different activities. She chaperoned IWA senior trips to New Orleans and Dallas, she would also chaperone dances and proms to be sure everyone was behaving. She and her sister Lupe were famous at St. Ambrose Mexican dinners and bazaars for their cheese enchiladas. She enjoyed dancing with Julian and they even went to Arthur Murray to take dance lessons with friends. She learned line dancing after Julian passed away and continued to go to dance functions with family. She was always ready to go out to eat and be with family and friends. As we said, she was always “on the go”.
