Laura graduated from the University of Florida with a degree in Food Science and Human Nutrition. She spent over a decade working in extended care, hospitals, and rehabilitation facilities in Virginia and Jacksonville, FL. She started her own nutrition counseling practice, authored a book, and coached cross country and swim teams over the years. Besides authoring her cookbook, she loved to set goals for herself that at one time seemed impossible, completing long distance swims, a marathon, and a half-ironman.
Laura is survived by her loving husband Patrick, sons Liam and Noah, parents Richard and Kathy Holtz, in-laws Mary, Jamie and Andrew Rellihan, siblings Melissa Heaton (David), Sister Agnes Mary (CFR), Bryan Holtz, Kara Crane (Stephen), 9 aunts and uncles, and 17 cousins. She is predeceased by her grandparents Mary and Earl Holtz, and Ruth and Robert Wiley.
In lieu of flowers, donations may be made in her memory to the Friends of Assumption F.A.I.T.H. Tuition Assistance Fund (904-398-1963). There will be a public visitation Friday, April 20, 2018 from 5-8pm at Assumption Catholic Church, 2403 Atlantic Blvd, Jacksonville, FL 32207. A Funeral Mass will be held Saturday April, 21, 2018 at 12:30 at Assumption Catholic Church, followed by a reception for family and friends
