

Jacky Simon, age 57, passed away suddenly on Friday, December 8, 2017, in Houston, Texas. Jacky was born June 30, 1960, the youngest of five siblings, to Jorge Simon and Olga Hilsaca Simon. She returned home to Honduras as an infant and remained until she was in her mid-30’s.
Jacky met Marlon Zavala in 1978. After dating for a few years, they married. To her family it was clear that Jacky married for love and she and Marlon were partners for 39 years. She followed her love to the United States, in 1994, where she and Marlon were first generation immigrants. Together, they made an incredible life with one another. Jacky worked hard to build the American Dream for her family- she had to learn how to work hard, cook, clean and speak English. She made sure that each of her children graduated from college and that they had a better life.
Jacky loved all animals, with the exception of insects and bugs. She loved her fur babies, Dino, Jada, Layla and Gigi with all of her heart.
One never left Jacky’s home hungry. She could persuade anyone to eat anything! She prepared food with love and pretended that her food dishes were not always the best. Her children would tell you differently, as they deem her a great cook. Cooking for others was a way for Jacky to express love toward others.
Every church, workplace and community that Jacky was a part of, she wholeheartedly invested into people and relationships. She gave her life to Jesus fully at Gateway Christian Center, where she attended faithfully for 17 years.
Jacky loved being employed at Vidant Medical Center, where she was a Lactation Specialist Assistant. She continuously prayed always for the families and babies. Jacky shared her faith and passion in the workplace while providing exceptional care to new mothers and babies. She always found a way to provide for people in need to make certain they were cared for. She always went the extra mile.
Jacky had a wonderful sense of humor and she could give as good as she got. She loved laughter and enjoyed being teased by her three children. They would imitate her on the job, her walk and her theatrical expressions. Jacky’s laughter was contagious!
Jacky was preceded in death by her parents; and sisters, Carolina and Marybell Simon.
She is survived by her husband, Marlon Zavala; children: Olga Marcela, Marlon Eduardo and Lisa Marybell Zavala; son-in-law, Juan Carlos Guevara; brothers, Ricardo and Roberto Simon. Jacky adopted many people she met along life’s journey into her extended family, who she considered “God appointed children”.
Visitation with the family will be Wednesday, December 13, 2017, from 7:00-9:00PM in the Chapel of Katy Funeral Home. Funeral Services will be Thursday, December 14, 2017, at 9:30AM, in the Chapel of Katy Funeral Home. Pastor Barbara Dellano, of Gateway Christian Center, will officiate. Interment will follow immediately in Forest Park Westheimer Cemetery, 12800 Westheimer @ Dairy Ashford.
