Jackson lived a life defined by resilience, sacrifice, and quiet strength. From his youth, Jackson always worked hard to provide for his family. He lived frugally and often worked two or more jobs to provide for his children’s future.
In pursuit of a better life, Jackson braved shark-infested waters to escape Communist China and swim to Hong Kong. He spent several years of his young adulthood in Hong Kong, where his daughter, Lok-Sze, was born. From there, Jackson made his way to Anchorage, Alaska, where, through perseverance and determination, he established a new life in the United States. He later settled in Las Vegas, Nevada, where he had his second son, Justin. He worked for another 20 years in the restaurant industry at multiple casinos and restaurants in the Las Vegas area. His favorite was the renowned Rio World Buffet.
Jackson found peace and great joy in fishing, often taking fishing trips throughout Alaska and to Lake Mead. He also had a remarkably creative mind. He loved constructing intricate scale models of battleships from random assortments of Lego bricks, including a detailed model inspired by the Type 055 Renhai-class cruiser from just a newspaper clipping. He also cherished sharing stories of his life, often reflecting on both its hardships and its joys with sincerity and depth.
Though cautious in nature, Jackson was kind and welcoming, always opening his home to others. He is loved and will be remembered by his children, Lok-Sze, Jasper, and Justin; his granddaughter, Penelope; and his nieces and nephews, who will carry forward his legacy of strength, sacrifice, and love.
