

Karen was born in Neptune, New Jersey, to Vincent and Margaret Applegate, and was raised alongside her younger sister, Linda. She spent most of her childhood and early adult years in the close-knit coastal community of Bradley Beach. From a young age, she carried a curious spirit and a quiet determination that would shape the course of her life.
After graduating from high school, Karen was bitten by the travel bug—an adventurous spark that led her to explore the world far beyond the Jersey Shore. She packed her bags and set out to experience life in places many only dream of, visiting countries such as Russia, Japan, France, and many others. These journeys became some of her most cherished memories, and she delighted in sharing stories of her travels with anyone willing to listen.
Karen built a successful career as a defense paralegal right out of high school, working for several notable law firms in New Jersey. She took great pride in her work and was involved in a number of high-profile cases, often recounting her experiences with a sense of excitement and purpose. She especially loved sharing the story of how one of the cases she worked on was first written into a novel and later went on to be made into a television movie—something she found both fascinating and a little surreal. Her sharp mind, strong work ethic, and natural ability to connect with others made her both respected and admired in her field.
Life took a beautiful turn when she met Joe, the love of her life, in a story that Karen always told with a smile. His apartment was above hers, and when part of his roof collapsed into her home, it unexpectedly brought them together. Karen would often joke that it was love at first sight when he knocked on her door—and she suspected he felt the same, especially since he offered to fix the ceiling and seemed to take his time doing so. That chance encounter blossomed into a lifelong love.
Karen and Joe were married on May 22, 1976, and soon after built a home together in Point Pleasant, New Jersey. In January 1981, they welcomed their daughter, Cara Leigh, who quickly became the center of their world and the heart of their family from the very beginning.
In 1989, Karen and Joe took a leap of faith that would define the next chapter of their lives. They sold their home, packed up everything they knew, and moved across the country to Las Vegas, Nevada, with a dream of building something of their own. Together, they founded J & K Bakery Equipment Service. Karen managed the administrative side of the business, effectively running day-to-day operations, while Joe handled fieldwork and maintenance. For 22 years, they worked side by side, building a company that became well known throughout Las Vegas and even beyond. Their partnership was not only successful, but a true reflection of their dedication to one another.
After Joe’s passing in 2011, Karen made the difficult decision to close the business they had built together, marking the end of an era that meant so much to her.
Above all else, Karen’s greatest joy in life was her family. She was a proud and devoted grandmother to her three beloved grandchildren—Josie, Abigail, and Dominic—each of whom held a special place in her heart. She treasured every moment she spent with them, especially the times they did art projects together. Karen loved seeing their creativity come to life and proudly admired every drawing, painting, and handmade creation they made for her. Their artwork was something she held close to her heart and often displayed with pride. She also loved to save funny and interesting videos to share with them, often leading to moments of pure, deep laughter together. She also shared a special bond with her son-in-law, Dominic, whom she loved as her own son and held a special place in her heart. She trusted him deeply, knowing her daughter was safe and well cared for in his love.
Karen also shared an extraordinarily close bond with her daughter, Cara. Their relationship was one of deep love, friendship, and understanding. They spoke every day and spent as much time together as they could, often finishing each other’s sentences and sharing laughter over the simplest things. Through her example and guidance, Karen gave Cara the foundation of a strong home life, teaching her resilience, care, and the importance of creating a warm and loving home of her own. Those lessons remain deeply cherished.
At home, Karen found her greatest peace and happiness in nature and the simple beauty of everyday life. She had a deep love for gardening and could often be found tending to her flowers and plants, caring for them with patience, pride, and joy. Her garden was one of her happiest places, and she continued to nurture it faithfully right up until the day of her passing. She was especially drawn to the beauty of flowers in bloom, butterflies drifting through the yard, and the quiet peace of birdwatching—moments that brought her comfort and a sense of connection to the world around her. She also had a quiet appreciation for a good book, often finding comfort in its pages.
Karen was also known for her vibrant and joyful spirit. She loved to laugh, to have fun, and to be surrounded by the people she cared about. Karen loved to talk and could often spend hours on the phone with loved ones and friends, sharing stories, laughter, and conversation. She was also a wonderful listener, always making others feel heard and valued. Whether it was a small gathering or a special celebration, Karen brought a unique energy with her—she was the spark, the light, and often the one who made moments feel a little more special. Her sense of humor, warmth, and outgoing personality made her unforgettable to everyone who knew her.
Karen will be remembered for her adventurous spirit, her resilience, her deep love of nature, and the immense love she gave so freely to those around her. Above all, she will be remembered for her deep love for her family. Her laughter, her stories, and her bright presence will be deeply missed, but the life she built and the love she shared will live on in all who knew her.
