Minerva Escribano

1935 – 2025

Minerva Ziomara Escribano, lovingly known as "Mimi," passed away peacefully on Sunday, November 16, 2025, at the Center for Hope in Scotch Plains, NJ. She was 90 years old.

Born July 21, 1935 in Matanzas, Cuba, Mimi's life was a testament to resilience, hope, and determination. In 1968, she courageously fled Cuba with her family, seeking freedom and opportunity in the United States. Settling in Elizabeth, NJ, she worked tirelessly in various factories during her early years, always striving to provide a better future for her loved ones. Her dedication and strong work ethic eventually led her to the Jewish Educational Center, where she spent many meaningful years until her retirement in 1998. Mimi was deeply respected for her warmth, dependability, and unwavering commitment to those she served.

Mimi was a devoted wife to Tomas Escribano for 52 years until his passing in 2005. Together, they built a life filled with love, strength, and family. She was a loving mother to Maria Julia and Tomas, and her kindness, quiet resilience, and steady strength left an indelible mark on all who knew her. Her presence brought comfort, and her love shaped the lives of her family and friends. She will be fondly remembered for her love of telenovelas, weather forecasts, tickle attacks, and her famous flan.

She is survived by her son, Tomas A. Escribano and her daughter-in-law Iris L. Ramos; her son-in-law, Mario Hernandez; her three grandchildren, Mario Hernandez Jr. and his wife Lisa, Tom Hernandez and his husband Eric John, and Jessica Escribano and her husband Daniel; and her five great-grandchildren, Mario, Anna, Benjamin, Lucia, and Christian. She was preceded in death by her husband, Tomas Escribano, and their daughter, Maria Julia Hernandez.

Mimi will be profoundly missed and forever cherished by all who were fortunate enough to know her.
