

Dominga "Minga" Valdez was born on July 28, 1946, in Plainview, Texas, to Jose Manuel and Mercedes Luitt Carrasco. After 79 beautiful years of life, she entered into eternal rest on June 10, 2026; leaving behind a legacy of faith, love, strength, and devotion to her family and friends.
As the eldest daughter of nine children, Minga helped shape the close-knit family she cherished throughout her life. She was preceded in death by her siblings Maria De Luz, Jose, Manuel, Johnny, and Cecilio Carrasco. She is survived by her brothers Jesse Carrasco, Robert Carrasco (Irma), and her sister Carol Carrasco. They will forever treasure the memories of gathering around the table each Christmas to enjoy the menudo she lovingly prepared for her family.
Minga was a lifelong Catholic and Cursillista. Her faith was the foundation of her life. She found comfort and peace in her belief in Jesus Christ and looked forward to the promise of eternal life. Her unwavering faith guided her through both life's joys and challenges.
Throughout her career, Minga worked in accounting, taxes, finance, and administrative support. Yet, the role she treasured most was serving as a cook at The Catholic Renewal Center, where she found great joy in serving others. She was an intelligent and determined woman who deeply valued education and encouraged her family to pursue knowledge and personal growth. Minga never stopped learning and was always willing to teach herself a new skill. Many who visited her home will fondly remember finding her on the couch working through crossword and Sudoku puzzles, enjoying a cigarette with a cup of coffee in the morning or a Bud Light later in the day.
On January 31, 1975, she married the love of her life, Elizardo "Chaldo" Valdez. Together, they built a beautiful life in Lubbock, Texas, filled with laughter, dancing, bowling, bingo, and countless cherished moments with family and friends. Their bond was one of deep love and understanding. If you asked Chaldo, he would tell you they could read each other's minds. In her final days, he remained faithfully by her side, caring for her with the same love and devotion that defined their marriage.
Minga was also blessed with the friendship of Maria Mendoza and Joe Herrera, who stood faithfully beside her and remained at her bedside until her final breath, a testament to the love and loyalty she inspired in those around her.
She was preceded in death by her beloved son, Bernardo Valdez, and daughter, Melissa Delgado, who surely welcomed her with open arms as she entered the gates of Heaven. She is survived by her children: Becky Herrera (Edward), Mary Ellen Reina (Daniel), Veronica Moreno (Leno), Marie Rodgers (Kevin), Michelle Pitlik (Ken), and Elizardo Valdez Jr.
Known lovingly as "Grandma Minga," she was the heart and matriarch of a large and loving family. She leaves behind 27 grandchildren, 62 great-grandchildren, and 8 great-great grandchildren, all of whom were blessed by her love, wisdom, humor, and unwavering support. She was also preceded in death by her grandsons Christopher and Joshua, and her great grandson Aiden, who undoubtedly joined Bernardo and Melissa in welcoming her home.
Minga's greatest joy was her family, that included many nieces, nephews, cousins & friends who became family; whom she loved deeply.
She left behind countless memories, treasured traditions, and a legacy that will live on in the hearts of all who knew her.
Though she will be deeply missed, her family finds comfort in knowing she is at peace, reunited with loved ones who went before her, and resting in the presence of her Savior. Her love will continue to guide and inspire generations to come.
She will be honored with visitation at Resthaven Funeral Home & Cemetery, 5740 West 19th Street, Lubbock, TX 79407, on June 17, 2026, from 2:00 pm to 8:00 pm, with a prayer service there the same day from 6:00 pm to 7:00 pm. A funeral service will be held at St. Joseph Catholic Church, 102 N Avenue P, Lubbock, TX 79401, on June 18, 2026, from 2:00 pm to 3:00 pm, followed by a committal service at Resthaven Funeral Home & Cemetery, 5740 West 19th Street, Lubbock, TX 79407, on June 18, 2026, from 3:00 pm to 3:30 pm. The family will gather at 605 27th Street, Lubbock, TX 79403, for a meal after the service.
Pallbearers will be Jordan Cavarrubio, Jaiden Kongstvedt, Michael Villanueva, Orlando Ortiz Jr., Edward S. Herrera, and Zane Montoya-Lopez, with Daniel Stinson serving as honorary pallbearer
