Elizabeth was born October 10, 1917 in McAllen, Texas to Mamie and Henry Porter Griffin. She graduated from the University of Texas in 1938 with a degree in education and moved back to the Rio Grande Valley where she taught English. She remained close to her sorority, Zeta Tau Alpha, throughout her life.
In 1940, she married the love of her life, John Calhoun “JC” Monk. They moved to Philadelphia, then Mississippi, before settling down in Abilene with their three children.
Never one to be content with idleness, Elizabeth started Elizabeth’s Dress Shop in Abilene, played bridge, organized social functions, did yoga, and was always walking her dogs. In the 1970’s she and J.C. bought a condo in Horseshoe Bay as a vacation house. In 1985 they decided to build their own house on Slick Rock golf course. Elizabeth has been a full time Horseshoe Bay resident since 1997 when she and J.C. finally retired.
She is preceded in death by her parents, husband, brothers Henry Porter Griffin Jr. and John William Griffin, and daughter Rose Marie Monk.
Elizabeth is survived by her son Jack Monk; daughter Carmela Robinson; grandchildren Jillian Monk, Callie Watkins, Brandon Reddell and wife Laura, Shayne Robinson, Kelley Robinson; great-grandchildren Griffin, Riley, Luke, Isabella, Mackenzie, Chelsea, and Caiden; nieces Barbara Griffin, Carolyn Williams, Gail Thomason; nephew Bill Griffin; close friend, Ann Monk; and her beloved dachshunds, Schatzi and Holly.
Services will be held at noon on May 3, 2014 at St. Paul the Apostle Catholic Church in Horseshoe Bay, followed by a celebration to honor Elizabeth’s life.
