
Born in Ashland, Oregon to Leo & Elizabeth Potter. She was the youngest of four children. Evelyn went by Eve through her adult life.
Evelyn took great pride in the fact that her great, great, great grandfather, Jesse Applegate who lead a large group of settlers on the Oregon Trail and was the leadership to establish the Applegate Trail. She talked of this often and was very knowledgeable about Applegate, Oregon history.
Evelyn attended Ashland & Medford schools. She started working at a very young age at Rogue Valley Country Club where her parents were chefs. Eve became a Sous Chef and was an amazing cook.
At the age of 21, she adopted her son Ron at only 3 days old, along with Ron’s dad. She was a great mom that taught him unconditional love, morals, to love the outdoors and the quality of life. Ron is the pride and joy of her entire life.
Eve then worked 20 plus years in her career at 3M, Kodak, Imation, Carestream before retiring. Once retired she and her husband moved to Mexico, where they lived for 5 years. They moved back to the Rogue Valley to be close to her Ron and her grandchildren.
Evelyn (Eve) is survived by her husband Raleigh Lund & their little dogs Mariah & Wilbur of Central Point, Or., her son Ron Shaw & wife Nicole of Medford, Or., five grandchildren & four great grandchildren of Oregon & Montana.
