She was born October 2,1924 to William and Pearl Vincent Parkinson and was the youngest of 5 children
Sue grew up in the Sugarhouse area where she graduated from South High in 1941 at the age of 16. She then attended the University of Utah.
Sue met her sweetheart, Joseph John "Jack" Lyon, at her ward the Sunday after he returned from his mission to Hawaii. They were married February 23,1944, in the Salt Lake Temple. They were blessed with 4 children. Sue was co-owner of Magazine Printing Company (later called Joseph Lyon and Associates) along with her husband, and worked until she was 78.
Sue served as the president of the East Millcreek Lions in 1969. She had many church callings but enjoyed the mutual the best. After returning from an activity to Sun Valley with the girls, she was referred to as Ms. Hollywood because of her dark sunglasses.
Sue loved gardening and had a green thumb. Her gardens were always perfect. She loved to bowl and was on the Lunch Bunch league for many years until it became too hard for her to see. Sue and Jack had many boats over the years and spent many happy times with their family at Flaming Gorge, East Canyon( and Lake Powell fishing and water skiing.
Sue was referred to as Grandma Sue by anybody who knew her. If you came to her house she would always tell people to call her Grandma Sue. She had a never ending candy jar when family and friends came over to play games.
Sue was preceded in death by her husband, parents, brothers and sisters, Vincent Parkinson, Zelda Parkinson, Virginia Snarr (Stan), Dale Parkinson (Sally), son Joseph Kent Lyon, great granddaughter Kaitlyn Freeman.
Sue is survived by children Richard Lyon (Bonnie), Pam Freeman, Debbie Thiriot, and daughter-in-law, Patsy Lyon, 13 grandchildren, Craig Freeman (Carrie), Shane Lyon (Heather), Michelle Broughton (Allen), Natalie Crosland, Nicole Frank (Tim), Kim Taggart (Jared), Heather Dorenbosch (Gerald), Brandon Lyon (Sara), Jared Freeman (Crystal), Josh Thiriot (Jamie), Derek Freeman (Kelly), Justin Thiriot ( Kim), Trevor Lyon (Julie) and 41 great grandchildren and 2 great great grandchildren and many nieces and nephews.
Funeral services will be Saturday March 2, 2019, at Wasatch Lawn (3401 South Highland Drive) at 11:00 am. There will be a viewing March 1st at Wasatch Lawn from 6-8 pm and 9:45-10:45am before the services.
The family would like to extend gratitude to Jenny Jordan who spent the last 3 months being her daily caregiver, Rocky Mountain Hospice and Rocky Mountain Home Care, who made it possible for her to stay home until the end.
