She was born May 29, 1968, the daughter of Emmett and Alice (Parks) Shaffer. Elizabeth enjoyed her time as a registered nurse. She also loved to collect horse figurines. More than anything, Elizabeth loved to be with her family.
Survivors include her father, Emmett Shaffer; sister, Crystal Aguilar; husband, Raul Miron; children, Robert Shaffer, Alice Sanchez, and Raul Brandon Miron; grandchildren, Robert (R.J.) Shaffer Jr., Nihmarah Shaffer, Julius Sanchez, Jonah Harrel, and Elijah Harrel; nephews and nieces, Daniel Aguilar, Christina Aguilar, Charles McKinnley, and Asher Aguilar.
She was preceded in death by her mother, Alice (Parks) Shaffer.
