Doris Kathaleen Engelke

Doris Kathaleen Engelke was born on February 24th, 1937, in Jonesboro, Arkansas. She later made her home in Pflugerville, Texas, where she was known and loved as a devoted mother, grandmother, great-grandmother, friend to many, and a phenomenal painter.

Doris was a strong woman who could be stubborn, and she would probably be the first to admit it. She was honest with everyone, whether they wanted to hear it or not, and had a funny soul that could make people laugh when they needed it most. She never let herself give up, no matter what life threw at her, and she had a way of lifting up the people around her whenever they were feeling down.

She was a phenomenal artist, and her paintings were hung in a Wimberley art gallery years ago, as well as in a small Cafe in Leander and at Southwood Movie Theater in South Austin.

Everyone knew Doris for her love of poker and coffee. I don’t think anyone can remember seeing her without a cup of coffee or a cigarette in her hand. Doris was a phenomenal cook and made some of the best desserts you could ask for. Every time someone asked for one of her recipes, they were usually met with the same answer: "I don't have a recipe. I just threw it together. I don't measure anything, ever." That was just Doris. She took pride in everything she made, and anyone lucky enough to sit at her table knew they were about to leave with a full stomach and a smile on their face. If you were lucky enough to sit at her poker table, there was a good chance you’d leave with your pockets a little lighter.

She was preceded in death by her parents, Don and Idell Henry; her husband, Glen Engelke; her siblings, Eleanor, Gail, Naomi, and Donnis.

She is survived by her brother, Leonard Henry; daughter, Lisa Engelke; son, Randy Engelke; grandson, Brandon Dalton; granddaughter, Heather Adams and her husband, Erik Adams; great-grandson, Braedon Dalton; great-grandson, Mikah Adams; great-granddaughter, Ella Adams; and many in-laws and friends.
