

Ernesto Alvarez Colon, 89, was called home by the Lord on October 6, 2023. Settling in DeLeon Springs for the last 48 years, Ernesto was born in Manati, Puerto Rico and was the baby of the family. A 4 star chef until his retirement, he also obtained his electrical and mechanical license.
Known for his positivity and as a “quiet giant”, Ernesto was a simple man, and a man of action. Ernesto was an avid fisherman, and loved his John Deere tractor. However, nothing overrode the love he had for his family.
He is survived by wife Laura Robles Colon; daughter, Nilsa Colon McKinney of Palm Beach; son, Erik Ernesto Colon of Boynton Beach; 3 grandchildren: Laura Katherine McKinney, Jake Mitchell Colon, Erik Andrew Colon; and sister, Elisa. Ernesto was met in Heaven by his parents Mr. and Mrs. Don Domingo Colon and his siblings, Vincente and Maria.
A devout Catholic, a Mass of Christian Burial will be held Tuesday, October 17th at 11:00am at St. Vincent Ferrer Catholic Church, 840 George Bush Blvd., Delray Beach FL 33483. A private burial will follow at Forest Lawn Memorial Gardens, where Ernesto will be laid to rest among his family members.
