Born in 1939 on the Greek island of Aegina to Pantelis and Christina Kosmas, Tom’s determined spirit defined his early years. At age 17 he became a Merchant Marine. Eight years later, with little more than $200 to his name, his ship was grounded in Coos Bay, OR. Eventually, they docked in Portland for repairs which is when fate intervened: he met Anna and was smitten. The two were married on Tom’s 26th birthday, March 30, 1965.
Tom’s legacy was rooted in family and tradition. In 1966, the couple welcomed their first son, Pantelis, followed by Christos in 1971. A fixture of the Portland culinary scene, Tom’s first business was with his brother, Fotios. He later became co-owner of the Mad Greek Deli, where they were known for authentic food and a lively atmosphere.
Beyond the deli, Tom was an avid gardener and a master entertainer. He was happiest when sharing his love of cooking and wine with friends and family. Many of the family’s most cherished memories were made at their Seaside beach house – days filled with walking, crabbing, and sharing endless stories and laughs.
Tom is survived by his beloved wife, Anna; his siblings, Haralambos, Katerina, Ionna, Panagiota, Metaxia, Evangelitsa, and Fotios; his son, Chris and daughters-in-law Kim and Lori (Marc); seven grandchildren, Brooklyn (Sam), Austin (Hayley), Nicholas (Kendall), Bailey (Nate), Payton (Sam), Anna (Robert), and Katerina; and three great-grandchildren, Margot (4), Ford (1), and Dean (3 months).
