

Simon was a graduate of Hermiston High School, and earned a certificate in Culinary Arts from Lane Community College. His passion for cooking led to a diverse career from catering, working in Portland’s culinary scene, to preparing meals at the David Douglas School District. He also volunteered at his local Oregon Food Bank when he wasn’t baking sourdough bread.
In his spare time, Simon tinkered with computers, even building his own PC. He loved gaming, from retro video games to board games. He enjoyed reading manga, comics, and fantasy/sci-fi/adventure literature. An anime fan, he enthusiastically watched the entirety of One Piece (over 1000 episodes), and attended retrospectives of Studio Ghibli films.
Simon was a joyful presence in the lives of his family and friends. As a child, he grew up around the family restaurant, rode bicycles, and played outdoors with his two sisters and three lifelong family friends. Though often a protective leader as an adult, he will always be the beloved and often mischievous didi of the group.
Fun-loving and quick to tell a joke, Simon’s easy-going nature earned him friendships wherever life took him. An avid traveler, he visited as close as Minnesota to as far as the bird cliffs in Iceland. A natural conversationalist, his warm and inviting spirit made others laugh and think. His strong sense of duty, loyalty, and generosity surrounded him with a loving community of like-minded friends. He could be goofy and compassionate. He worked hard and cared deeply. He was one of the most important people in the lives of many.
Simon is survived by his father, Ka Sui; his mother, Pui Yiu; his older sisters, Leslee and Amy; and numerous aunts, uncles, and cousins.
