Joseph David Villalon, 47, passed away on January 28, 2022 in Pueblo, Colorado. Born in Pueblo, he was proceeded in death by his parents Dr. Joseph H. and Esther Villalon of Walsenburg. Joseph graduated from John Mall High School in 1992 and completed a Bachelor of Science in Biology and a minor in Chemistry at the University of Southern Colorado in Pueblo in 1997. Joseph also went on to complete a Bachelor of Science in Business Administration at CSU Pueblo in 2007 and completed courses at the Cook Street School of Fine Cooking and received an Associate degree in Culinary Arts at Pueblo Community College in 2006. Joseph worked at Choice Hotels from 1997-2021 in guest services and was Chef owner for Petite Noya Personal Chef and Catering, LLC which he founded in 2008. Joseph proudly served his community as a Knights of Columbus at the Shrine of St. Therese and was currently the Grand Knight for his parish and the District Deputy. Joseph will always be remembered for his friendship with others and desire to keep people fed. He loved growing up in Walsenburg and would fondly tell stories of his time spent on the family farm with his Grandpa Solomon Villalon. Joseph also took great joy in his many trips to Spain having participated in the Camino de Santiago, stating that it was life-changing and deepened his Catholic faith. Joseph is survived by his sister Karen (Steve) Shea of Pueblo and nephews Liam and Henry Shea of Pueblo. He was loved by many including Andreana Urioste and family, his godparents Pete and Julia Martinez as well as many aunts, uncles, cousins and friends. In lieu of flowers, donations may be made to the Shrine of St. Therese Catholic Church or the Knights of Columbus Council #12720 in memory of Joseph. The family requests that all in attendance please wear masks.
