May his memory be eternal.
Nick Kapos' vegetable garden stood out. Neighbors stopped to admire the lush rows of corn, zucchini, tomatoes and fava beans and even got a bag of vegetables to take home. It's no wonder his wife, Cynthia, called him "sweet pea."
Nick Kapos, 82, died Sept. 20 after an unfortunate accident.
He was born on Christmas Day to immigrant parents in Kaysville, and along with his twin brother and older sister helped run the family's 25-acre farm.
He attended Davis High School and Utah State University, where he earned a degree in education. Nick taught art at North Davis Junior High School and would create a legendary wall-size mural of the school mascot, a Norseman, that remains with the school today. Nick went on to teach special education at Davis High School and was a familiar face at football and basketball games for taking tickets at the gates.
Nick and his previous wife, Georgette, had four daughters he considered the apple of his eye. His girls could always expect to receive their own box of chocolates on Valentine's Day from Dad. He enjoyed the road, whether it was driving long vacations or motorcycle rides around Davis County with a daughter's arms wrapped around his waist.
He was proud of his Greek heritage. He sang in the church choir as a youth, worked dozens of church festivals and was a member of the AHEPA men's organization.
He married Cynthia Engar in 1993 and they enjoyed a life full of travels around the world -- Greece, Turkey, Italy, Mexico, Germany, India and Egypt. After retiring he became a behind-the-scenes force in his wife's BellyDancing by Thia business. The couple relished movies and cooking, using vegetables Nick grew in the magnificent garden of their Murray home.
Along with his wife, he is survived by his children, Shia Kapos (Peter Behle), Kathy Stephenson (Michael Stephenson), Nicki Kapos, Trish Kapos (Chris Pullos); grandchildren Alex Behle, Ari Behle, Matthew Stephenson, Ellen Stephenson, Andrew Reich, James Reich, Xanthe Kapos-Pullos; great-granddaughter Rhyklen Reich; his brother John Kapos (Mary), sister Sophie Drossos (Bill), brother-in-law Peter Paul Engar and numerous nieces and nephews. He is preceded in death by his parents Pete and Tasia Kapos and in-laws Peter Paul Sr. and Juanita Engar.
Nick's family is thankful for the support of the community and the Murray City Police Department.
Friends may call Sept. 24 at Holy Trinity Greek Orthodox Cathedral, 279 S. 300 West from 6 p.m. to 8 p.m. Trisagion at 7 p.m. Funeral services Sept. 25 at Holy Trinity at 10 a.m. Internment at Kaysville City Cemetery, 500 Crestwood Road, after the funeral.
In lieu of flowers, the family asks that donations be made in Nick Kapos' memory to Hellenic Cultural Museum in Salt Lake City.
