Nicole was born May 27th, 1983 in Camarillo, California to John Rolfe and Jennifer Lei (McPhee) Taylor. Nicole was born 2 months premature and weighed just 2 pounds 15 ounces. But what would become her theme, Nicole fought and overcame the odds to survive and live a full and happy life.
Nicole is survived by her father, John, his wife Florcita, and her siblings: Larissa, Brian, his wife Carly (Allphin) and Brigette and her husband Matt Hammond, as well as three wonderful nieces and nephew: Molly, Ollie and Jenny. She is preceeded in death by her mother, Jennifer, and her grandparents. It is a great comfort to the family to know of the reunion that Nicole and her mother are now having.
With great energy, effort, and persistence, Nicole graduated from Pleasant Grove High School in 2001. She continued her studies and attended Utah Valley University for a time on scholarship. Nicole then entered the workplace, mainly focusing in retail, until she joined Henry Schein as a customer service representative in 2006. She would successfully hold this position for 15 years.
Nicole loved good food (especially a quality burger), a good shopping trip and a good holiday Hallmark movie marathon. She had a strong love and attachment to Disney, with Winnie the Pooh being her favorite.
Nicole was a tremendous provider and teacher of love and acceptance. She was an example of grit and determination. She will be sorely missed.
The family would like to thank Nicole’s therapist for the years of friendship and service. And also the doctors and nurses at Timpanogos Hospital for such compassionate care.
In lieu of flowers, in true Coco fashion, it would be “neat” to donate to Kids On The Move, which provides services throughout Utah to support families with young children with special needs.
