

Carol Bennett Erickson passed away on May 4, 2024, in San Antonio, Texas surrounded by her family, at the age of 82. She was born on December 25, 1941, in Darlington, Maryland. Carol leaves behind a legacy of love, laughter, and cherished memories.
Her love for cooking was legendary, as she poured her heart and soul into every dish she prepared. From hearty stews to delicate pastries, her creations were a testament to her creativity and love for her family. No holiday or family gathering was complete without Carol's famous recipes, each dish infused with a generous serving of love.
But perhaps Carol's greatest joy came from being a grandmother and great-grandmother. She cherished every moment spent with her beloved grandchildren and great-grandchildren, showering them with endless love and affection. Whether it was baking cookies together, playing games, or simply sharing stories, Carol's presence filled their lives with warmth and joy.
Her love for swimming was evident to all who knew her. Whether it was swimming laps for exercise or simply basking in the sun by the poolside, Carol found peace and tranquility in the water, a place where she felt truly alive.
As a devoted fan of the Dallas Cowboys and the San Antonio Spurs, Carol's passion for sports knew no bounds. She cheered on her favorite teams with unwavering loyalty, her enthusiasm infectious to all who watched the game alongside her. Whether it was shouting at the television screen or donning her team's colors with pride, Carol's love for football and basketball was a defining aspect of her personality.
She is preceded in death by her brother, Harry Bennett. Carol is survived by her sons, Mark Erickson and Todd Erickson (Celeste); grandchildren, Jillian Evans and Brennan Erickson; greatgrandchildren, Kenzli Erickson, Rozzlyn Evans, and Paizley Spain; sisters, Eva Bell and Mary Bennett; and numerous extended family and friends.
