Jo was born on November 25, 1930, in Columbus, Ohio to Burley Michael and Margaret Eshelman. Throughout her life, Mom exhibited the virtues of kindness, patience, empathy, and love to her family and friends.
Jo was a devout Catholic and it was serendipitous when she fell in love with a young Jack Carroll who at the time of their meeting was pursuing a path to Catholic priesthood. Jack abandoned those plans, and they were married on November 17, 1951. The couple shared 66 wonderful years of marriage and a deep devotion and service to the Catholic Church.
A military post took the newly married couple to Los Angeles where Jo started to explore her lifelong love of the arts. She was an avid reader, near constant hummer and singer, and occasional poet. Her poems will be cherished by her family forever.
Jack and Jo started their family and returned to Ohio to surround their children with loving uncles, aunts, cousins, and countless family friends. In 1967, Jacks career in television moved the family to what would become their new lifelong home in San Antonio, Texas, where they found a welcoming new community through their involvement with St. Gregory the Great, Ursuline Academy, Antonian High School, and St. Matthews Catholic Church. Jo quickly involved herself in room mother and PTA duties, was a proud member of The Catholic Daughters of the Americas and later in life served as a lay Eucharistic Minister.
She is preceded in death by her parents, Burley Michael and Margaret Eshelman, her son, Thomas Carroll, her husband, Jack Carroll, and her son in law, Morgan King.
Jo is survived by her daughters, Joan Carroll, Judy Melgaard and her husband Andy, Kathleen Paul and her husband Norman, Julie Kleck and her husband Kevin, and her son, John Carroll and his wife Brenda Levenstein. She is also survived by her ten grandchildren and six great-grandchildren, whom she loved with all her heart.
Her family will receive friends on Tuesday, May 3, 2022, from 6:00 P.M. until 8:00 P.M. at Porter Loring Mortuary, 1101 McCullough Avenue.
