Huey Griffin McCoulskey, Jr. peacefully left this world to join his Lord on June 28, 2025, at the age of 90 with the love of his life, Patricia Boenig McCoulskey, by his side. He is survived by his wife of 65 years, Pat, his son Chris McCoulskey, his daughter Coco Leal and husband Tony, grandson Tony Leal, granddaughter Lindsay Franco and husband Richard, granddaughter Logan Leal and her husband Charles Dresser, granddaughter Lynden Leal, and his great-grandchildren Gracey and Gus Leal, Nina Bea Franco, Christopher “Scottie” McCoulskey, and Evan Lily Leal Dresser. He is also survived by his brother and best friend, Marshall McCoulskey and wife, Janie, along with numerous nieces and nephews who love him dearly. He is preceded in death by his parents, Huey Griffin McCoulskey Jr., and Frances Allen McCoulskey and sister, Mary Sue McCoulskey Baker.
Huey was born in Kaufman County on October 25, 1934. During his childhood, Huey moved with his family to San Angelo where he grew up in the close-knit community of Lakeview and graduated from Lakeview High in 1952. He rough-necked in Nebraska during the summers to help pay for his tuition at his beloved University of Texas. While at “The University” (there was only one true college in Huey’s eyes), he lived and worked at the Cheeve’s boarding house where he would make several life-long friends and meet his future wife, Pat. It was there that he nicknamed her “Burl” from the Burleson’s Honey slogan - [italics] “Don’t call your honey, honey, call her Burleson’s.”
Following college, he and Pat started a family in Rosenberg, Texas, which he recently described as the “best thing” he did in his life; that is, having Chris and Coco. A life-long public servant, Huey served Lamar CISD for over 30 years as an educator, starting as a teacher and coach. After obtaining his Master’s of Education in 1965, he was honored to open the brand-new Deaf Smith Elementary as the principal in 1966. He served as principal there for 15 years before becoming the Personnel Director for LCISD. He especially enjoyed meeting and recruiting new teachers from across the state and country.
Upon retiring from his career in education in 1991, Huey continued his work in public service as a State Representative for the 73rd and 74th Legislatures. He loved his time dedicated to the people of Fort Bend County where he served as a member of the Public Education and Investments and Banking Committees. He continued to form more lifelong friends during his service.
Aside from his love of community, some of Huey’s great enjoyments were the outdoors and hunting. After his retirement, he and Pat, along with his brother, Marshall and wife Janie, built a log home in South Fork, Colorado. They spent over 20 years hosting family, friends and sharing their home with others picnicking, hiking, hunting, river rafting, and 4-wheeling. It was during their time in Colorado when Huey and Pat helped found New Hope Church in South Fork - a church still serving the community he loved. True to form, Huey continued adding to his collection of lifelong friends. Later in life, he and Pat moved back to Fort Bend County to spend his last years close to family.
Huey’s memory will live on through those who love him and will remember him as a friend and dedicated family man who loved serving his church and community. He will be remembered for his love of telling stories, as a passionate sports enthusiast, for his fondness and skill at card games, and especially for his playful knack for lighthearted teasing. Huey loved projects - his highlights were a beautiful vegetable garden, koi pond and the log cabin in Colorado. He never met a stranger and made friends throughout all areas and stages of life and will be greatly missed by those who love him.
Those serving as pallbearers during Monday’s service are nephews Rick Baker, Adam Boenig and Steve Brown with great nephews Daniel McCoulskey, Doug Jackson and Cash Boenig.
Officiating will be Reverend Michelle Hall, and our eulogist will be Revered Ernest McCoulskey, lovingly called “Red”, only by Huey.
