Fred Siu Kui Chan

Fred was born on October 31, 1945, in China and grew up in Hong Kong before moving to Canada and later to Connecticut.

Fred graduated from Ottawa University and built a successful career. He was the proud owner of Chan’s Choice, in Norwalk, CT, where his exceptional cooking skills, hard work, dedication, and love of people helped him build lasting relationships with customers, employees, and friends. He was also a skilled carpenter, able to build, repair, and fix just about anything.

Fred's greatest pride was his family. He was the best dad to his children, Alex and Jordan, and was immensely proud of them. He supported them, encouraged them, celebrated their successes, and was always there when they needed him. Being their father was one of the greatest joys of his life.

Fred was a proud and loving grandfather who adored his grandchildren and treasured every moment he spent with them. He loved watching them grow, sharing stories, teaching them how to cook, and enjoying great meals together.

His daughter Jordan, and son-in-law, Andy, are expecting a baby girl in February, and Fred was so excited to meet his future granddaughter and preparing for her arrival. Though he will not be here to hold her physically, she will grow up knowing how much her grandfather loved her.

Fred was generous, kind, and caring and always willing to help others. He gave his time, talents, and resources, touching the lives of his family, friends, and many others throughout his life. He had good taste in all things, especially when something was good quality and a good deal, and he was never afraid to voice his opinions.

Fred loved cooking good food and sharing a good meal with the people he loved. Cooking was one of the ways he showed his love, and family and friends will always remember the delicious meals (especially his fish and seafood dishes), laughter, and connection. He enjoyed travel, fun, and the simple pleasures in life. He especially loved his VW bus and his convertible, which brought him great enjoyment. Whether cruising in his convertible, cooking a great meal, or simply spending time with the people he loved, Fred knew how to enjoy life.

Those who knew Fred will remember his kindness, warmth, sense of humor, love of family, appreciation for good food and good times, and the genuine care he showed to the people around him. He had a way of making people feel welcome and valued, and his opinions and personality were never hard to miss.

Above all, Fred will be remembered as an amazing dad to Alex and Jordan, a loving grandfather, a loyal friend, and a man who loved his family deeply. His family will carry his memory forward in the meals they share, the stories they tell, the traditions they continue, and the love he gave them so abundantly.

We know he is watching over us, reminding us to always smile, that talk is cheap, waste not, want not, to always look for a good deal, and, most importantly, to enjoy a good meal. These simple words capture so much of who Fred was, his humor, his practical wisdom, his appreciation for the good things in life, and his unmistakable personality. We will hear his voice in these reminders and see his smile in our memories.

Fred was predeceased by his parents, Chi Hung and Shuk Yung Chan, and cherished friend Gloria Breese (Gram).

He is survived by his partner, Danielle McGahran, his children, Alex and Jordan and their spouses, Heidi and Andy; his beloved grandchildren, Madeleine, Elliott, and Finnegan; sisters, Cathy, Tammy, Angie, and Ida; mother of his daughter, Melissa Fahey, and many extended family members and dear friends who will miss him dearly.

A wake will be held from 1 pm - 3 pm, with a prayer service at 1:30 pm on Saturday, September 5th, at Leo P. Gallagher and Son Funeral Home, 2900 Summer St., Stamford, CT. Burial will be held privately.
